Today we’d like to share our recipe for zucchini pie with fresh herbs.
- 5 cups of grated zucchini (without any seeds)- remove juice!
- 1 big carrot – grated
- 2 big onions – chopped
- 5 pcs of garlic – chopped
- 2/3 cup olive of oil (or grape seed oil)
- 2/3 cup of bread crumbs
- 1/2 tsp of turmeric
- 1 tsp of curry
- 4 eggs
- chopped herbs (fresh or dried): parsley, oregano, thyme, basil and dill
- salt and pepper
Preheat oven to 350 degrees. In a medium pot, sauté chopped onion and garlic. (It is recommended that you use Philipiak Milano pots so you don’t have to use any oil). Add black pepper and dried herbs. (If you use fresh herbs, don’t add them now.). Prepare the large stainless steel bowl for baking by adding some oil and bread crumbs. Mix all ingredients in a separate bowl. (If you are using fresh herbs, add them now). Then, transfer the ingredients to the prepared large stainless steel bowl and bake about 1 hour.
